Shaved ice has deep roots across central and southern Italy: the old grattachecca — from "grattare", to scrape, and "checca", a block of ice — was a way to keep cool long before fridges, its base simply ice hand-scraped with a steel blade.
The shavings fill the glass, then your choice of syrups or fruit purées goes in, finished with pieces of fresh fruit.
